Lemon Yogurt Dessert

Ingredients

  1. Wheat Crackers like Marie - 1 packet (10-15 crackers)

  2. Dates - 4-5

  3. Butter 1 TbSp

  4. Hung Curd (Curd with no Water) - 1 Cup

  5. Paneer - 50 gm

  6. Cashews soaked in hot water -10 pieces

  7. Honey - 1-2 TbSp

  8. Lemon Juice - 2 tbsp

  9. Lemon Zest - 1 TbSp

  10. Milk Powder - 1 TbSp (Optional)

 

Method

  1. Grind the crackers in a food processor with dates.

  2. Add Melted butter to the cracker mix and mix well.

  3. Line a flat tray preferably square or rectangle in shape with parchment paper and spread the cracker mixture, pressing gently to make an even layer.

  4. Refrigerate for 10 min.

  5. Blend paneer, with socked cashews to make a thick paste. You can add a little water.

  6. Pour the mixture into a bowl add lemon juice and half lemon zest, honey and mix.

  7. Add Yoghurt in this mixture gently.

  8. Refrigerate for 30 minutes.

  9. Pour the cooled yoghurt mix on the chilled cracker base making an even layer. Sprinkle the rest of the lemon zest on the top.

  10. Optional: Add 1 tbsp milk powder to the mix for a richer flavour.

  11. Refrigirate for 4-5 hours.

  12. Cut even pieces to serve.
