Ingredients
Lobia aka black-eyed bean (Soaked Overnight)- 1 Cup
Spinach Leaves (Chopped)- 1/2 Cup
Fengruk (Methi) Leaves (Chopped) - 1/2 Cup
Onion finely copped - 1 small
Ginger - 1inch piece
Green Chilli (Chopped)- 1/2 small
Cumin seeds
Salt
Black Pepper
Cooking Oil
Method
Grind the soaked Lobia with Ginger and green chilli in the processor to make a thick paste with a sandy texture.
Mix salt (to taste) and whisk briskly for 2-3 minutes to make the batter fluffy.
Add the chopped onion, spinach and methi leave to the batter.
Add Cumin seeds and Black Pepper (to taste) and mix well.
Take 1-2 TbS of batter and cook in Appe Maker or fry in oil.
Serve hot with coriander chutney/ketchup!
