Ingredients
Raw Mangoes-3-4(500 gms)
Sugar-250 gms
Cumin seeds-1 tbsp
Rock Salt-As per taste
Salt-As per taste
Method
Peel the mangoes, wash thoroughly, and cut in small pieces.
Add 1 tsp of ghee to the Pressure Cooker and add cumin seeds to it.
As seeds start cracking add mango pieces in this and mix well for 2-3 minutes
Add 1/2 cup water and pressure cook the mixture for 5 minutes.
Open the pressure cooker and mix sugar salt and rock salt in this mixture and cook till the sugar dissolves.
Let the mixture cool and then mix the mixture well in the food processor.
Strain the mixture , squeezing the pulp to extract the juices. Discard the left over pulp.
Cook the strained mixture till it thickens. The mixture should stick to the spatula. .
Remove from the flame and let it cool.
The mixture will thicken as it cools and form a jelly.
You can use this as chutney and can have it as a spread on bread.
Add 1 Tbsp of this mixture in a glass and pour cold water and mix to make Panna drink on a hot day !
